Roasted Jerusalem Artichokes
2 1/2 lbs Jerusalem artichokes
1. Pre-heat your oven to 350 degrees Fahrenheit.
2. On a baking sheet or pan, lay the Jerusalem artichokes in a single layer, making sure not to over crowd. Season with salt, pepper and drizzle with olive oil. Bake for 15-20 minutes, turning the chokes half way through. Serve!
