Skirt Steak with Chimichurri Sauce
2 1/2 lbs skirt steak
1/4 cup olive oil, plus 1 tbsp
2 cups parsley
1/2 tsp hot pepper flakes
4 garlic cloves
half lemon, juiced
1. In a processor, combine the garlic and parsley. Chop until the ingredients are finely chopped. Transfer to a bowl and mix in the lemon juice, olive oil, pepper flakes and salt. Stir and set aside.
2. Meanwhile, fire up your grill, or if you have a grill skillet, heat that up. When smoking add the oil. Season your skirt steak generously with salt and pepper. Add the steak to the hot pan or grill. For medium-rare cook for 2 minutes per side. For medium add another minute.
3. Remove and let the meat rest for 3-5 minutes. Slice the steak and top with the chimichurri sauce and serve. Enjoy!
