Shabbat Menu: Potato Wrapped Fish and Chocolate Crepes

Tomato and Mozzarella Salad

Ingredients:

3 plum tomatoes

fresh buffalo mozzarella, sliced into rounds

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

coarse kosher salt

freshly ground black pepper

fresh basil leaves

Instructions:

1. Alternate cheese slices, basil and tomato slices, overlapping slightly.

2. Spoon oil and balsamic over each serving, letting it form a pool like a sauce.

3. Season with salt and pepper, cover and let stand at room temperature for at least 30 minutes before serving.

4. Garnish with fresh pesto, if desired. Enjoy!
