Shabbat Menu: Lime Chicken and Mango Sorbet

Vegetable Stir-Fry Rice

Ingredients:

2 eggs

3 cups cooked white rice

1 tbsp oil

1/2 cup chopped carrots, diced

1/2 cup corn

1/2 cup peas

1/4 cup onion, chopped

1 tsp Chili sauce

1 tbsp soy sauce

Instructions:

1. Heat a wok pan (if you have one if not just a big skillet is fine). Add the oil, when hot add the onions. Stir fry until translucent.

2. Add the rice, stir until the onions and rice are evenly distributed. Crack the eggs in and continue stirring.

3. When the egg is cooked through, add the peas, corn, soy sauce and chili sauce (optional). Continue stirring for another 2 minutes. Serve immediately. Enjoy!
