Shabbat Menu: Kofta and Chocolate Brownie Cake

Pomegranate Coucous

Ingredients:

1 cup couscous

1 1/2 cups hot water

1 cup pomegranate seeds

1/4 cup fresh mint leaves, chopped

1/2 cup fresh parsley, finely chopped

1/2 lemon, juiced

2 tbsp extra-virgin olive oil

kosher salt and freshly ground black pepper to taste

Instructions:

1. Coarsely chop parsley and mint.

2. Put the couscous in a medium bowl. Add in the chopped herbs. Pour water over it and stir with a fork to combine. Cover and let sit for 10-15 minutes, then uncover and fluff with a fork.

3. Add lemon juice, drizzle with olive oil, and season with salt and pepper. Toss the pomegranate in and serve!
