Shabbat Menu: Honey Chicken and Sweet Plantains

Avocado Salad

Ingredients:

2 limes, juiced

2 tbsp rice wine vinegar

1 tbsp honey

1 tbsp cumin

1/4 cup finely chopped cilantro

salt and freshly ground pepper to taste

1/2 cup olive oil

1 large red onion, diced

2 large ripe Haas avocados, peeled, pitted and cut into 1-inch chunks

Instructions:

1. Mix lime juice, vinegar, honey, cumin, cilantro, salt, and pepper in a bowl and whisk together. Slowly drizzle in the olive oil and mix until evenly incorporated.

2. Drizzle onion and avocado with dressing and gently mix, being careful not to break up the avocado. Serve!
