Sun-Dried Tomato and Sardine Crostini
1 baguette, sliced in 1 inch slices and lightly toasted
1 tbsp extra virgin olive oil
2 cups whole sardines
1 cup whole sun dried tomatoes, in olive oil
1 cup green olives
1 small red onion, diced
pepper to taste
1 lemon, juiced
1. Toast the bread slices. Meanwhile, slice your olives and the onion. Mix together with the olive oil and lemon juice. Season with pepper.
2. Spoon the olive and onion mixture on top of the bread. Top with 1-2 sun-dried tomatoes and top the tomatoes with a sardine. Repeat for the rest of the slices of baguette.
3. Serve crostini with some dill for garnish. Enjoy!
