Shabbat Menu: Cedar Plank Salmon and Watermelon Salad

Grilled Vegetables

Ingredients:

1 yellow pepper, quartered

1 red pepper, quartered

2 zucchini, sliced into ½ inch slices

1 eggplant, sliced into ½ inch slices

olive oil

salt and pepper

thyme

Instructions:

1. Drizzle olive oil, thyme, salt and pepper over all the vegetables.

2. Grill for 10-12 minutes over medium heat. Serve!
