Shabbat Menu: Cedar Plank Salmon and Watermelon Salad

Cedar Plank Salmon

Ingredients:

1 untreated cedar plank

1 (1 1/2-lbs) salmon fillet

salt and freshly ground black pepper

6 tbsp Dijon mustard

6 tbsp brown sugar

parsley, chopped for garnish

3 lemons, quartered and sliced

Instructions:

1. Soak cedar plank in water at least 30 minutes.

2. Remove pin bones from salmon, if necessary. Place the fish (skin side down) on the plank and coat the fish with the mustard, then top with the brown sugar. Season with salt and pepper and place lemon slices over the fillet.

3. Grill the fish on plank over medium-high heat. Cover and grill for about 30 minutes or until desired degree of doneness.

4. Serve with lemon wedges and some parsley. Enjoy!
