Shabbat Menu: Cedar Plank Salmon and Watermelon Salad

Mediterranean Salad

Ingredients:

2 tomatoes, cut into wedges

1 English cucumber, sliced

1/2 cup black olives, chopped

1/2 cup parsley, chopped

1 tbsp capers

1/2 cup feta, diced

2 cups arugula

salt and pepper to taste

2 tbsp extra virgin olive oil

1 tbsp red wine vinegar

Instructions:

1. Combine all ingredients together, give it a gentle toss. Serve!
