Zucchini Fries

This is a recipe for zucchini fries. Deliciously crisp on the outside and perfectly cooked on the inside. Can also be served as a side dish and a great vegetarian option.

I like to serve these zucchini fries with a tahini sauce or a basic tomato sauce.

Ingredients

  • olive oil, for frying
  • 2 1/2 cups panko breadcrumbs
  • 1 tsp salt
  • 1 tsp pepper
  • 2 large eggs
  • 3 medium zucchini, cut into 3-inch long by 1/2-inch wide strips

Instructions

  • 1. Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until your thermometer says 350 degrees Fahrenheit.
  • 2. Take out 2 dishes. In one medium dish, mix together the panko, salt and peppers. In the other, whisk the eggs.
  • 3. Working in batches, dip the zucchini into the eggs and coat allowing the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet to rest before frying.
  • 4. When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
  • 5. Serve with a garlic tahini sauce.
