Twice Fried French Fries

This is a recipe for twice fried french fries. For those of you that have never made homemade french fries, this recipe is for you. They are beyond amazing, and with very little effort worth all of the work. Just takes patience, and direction.
These fries are so delicious because they are cooked twice. One, to cook the inside of the potatoes and the second time is to crisp the outside. Isn’t that exactly what makes a fry so amazing? Crunchy crisp outside, and soft smooth inside texture. Try this genius method and you too will start making the best fries ever! Enjoy!

Ingredients
- 2 1/2 lbs russet potatoes
- vegetable or grapeseed oil, for frying
- salt
Instructions
- 1. Peel and cut potatoes into thin strips.
- 2. Place potatoes in a large bowl and cover with cold water. Refrigerate for at least 1 hour.
- 3. In a heavy pot or Dutch oven, heat oil over medium-low heat until the oil reaches 325 degrees Fahrenheit.
- 4. Drain water from the fries and wrap potato pieces in a clean dishcloth or tea towel and pat dry. Carefully add fries, a handful at a time, to the hot oil. Fry, stirring occasionally, until potatoes are soft and limp and begin to turn a blond color, about 6 to 8 minutes. Using a slotted spoon, carefully remove fries from the oil and drain on paper towels. Let rest for at least 10 minutes.
