Tuna Salad

This is a recipe for tuna salad. Personally, I love tuna salad.

Its great for a late breakfast/brunch or a lunch. This tuna salad is great on a roll, toast, crackers or a favorite bagel.

I love for the salad to look lively, instead of the usual pale white, so I add tomatoes, celery and red onions. Another special addition is that I add a little bit of mustard. I also try not to break the tuna pieces up too much since I prefer a chunkier texture.

Ingredients

  • 24 oz canned tuna in water
  • 1/2 small red onion, finely diced
  • 1 cup celery, finely diced
  • 1/2 cup fresh Italian flat-leaf parsley, chopped
  • 1 cup cherry tomatoes, diced
  • 2 tbsp mustard
  • 3 tbsp mayo
  • salt and pepper to taste

Instructions

  • 1. Drain tuna and place it in a large mixing bowl.
  • 2. Use a fork to shred the tuna until desired texture is reached.
  • 3. Mix in diced vegetables. Add mustard and mayo and mix well. Season with salt and pepper.
  • 4. Serve with French baguette or your favorite bread!
