These sweet potato latkes are not the most traditional Hanukkah food, but it is so delicious that it should definitely become a tradition in your family. I love variety in every spread, and latkes shouldn’t be an exception!

Ingredients

  • 3 sweet potatoes, peeled
  • 2 eggs
  • 1/4 cup flour
  • 1 tbsp brown sugar
  • 2 tsp cinnamon
  • oil for frying

Instructions

  • 1. In a processor or using a grater, grate potatoes.
  • 2. In a large bowl, combine potatoes, eggs, flour, brown sugar and cinnamon. Mix well until evenly incorporated.
  • 3. Heat skillet with oil over medium heat. Form the potato mixture into patties using your hands. Carefully place latkes into skillet and cook for 2-3 minutes per side. Flip and repeat.
  • 4. Drain latkes on paper towels. Serve hot with your favorite topping!
