Ingredients

  • 2 tbsp olive oil
  • 2 sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 tsp pepper
  • 1 tsp brown sugar
  • 1/2 tsp cinnamon
  • 1 yellow bell pepper
  • 1/2 cup dill, finely chopped

Instructions

  • 1. In a skillet heat oil and add potatoes. Cook over medium heat for 15 minutes.
  • 2. Add pepper, brown sugar and cinnamon. Toss and cook for 5 minutes. Add bell pepper.
  • 3. Cover with lid and cook for another 15 minutes.
  • 4. Toss with dill and serve! Enjoy.
