Sufganiyot: Jelly Doughnuts

What are sufganiyot? Sufganiyot are jelly-filled doughnuts that are traditionally made and eaten on Hanukkah.

To me any kind of doughnut is delicious. What’s not to love? Dough fried in oil, stuffed with jelly, chocolate, or any filling you like, is simply delicious!

We celebrate the miracle of Hanukkah and its oil by frying lots of treats in oil. Sufganiyot is a perfect example of just that.

Ingredients

  • 1/2 cup warm water or milk (about 110 degrees)
  • 1 tbsp yeast
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1/4 cup plus 1 tsp sugar
  • pinch of salt
  • 2 large eggs
  • 2 tbsp butter or margarine, melted
  • 1 tsp vanilla extract
  • grapeseed oil for frying
  • 1/2 cup raspberry or strawberry jam, preserves or jelly

Instructions

  • 1. In a bowl, stir warm water or milk with 1 tsp sugar. Add in the yeast. Let this mixture stand until the yeast activates, about 5-10 minutes.
  • 2. In a large bowl, combine flour, sugar and salt.
  • 3. When the yeast has activated, add yeast mixture, eggs, vanilla and butter to the dry ingredients. Mix together until you have a wet dough consistency.
  • 4. Dust counter with flour. Turn dough out onto the counter and knead until the dough is no longer sticky. Return dough back to a bowl, cover and let it rise for 2 hours.
  • 5. When the dough has risen, roll it out onto a flour dusted counter until 1/2-inch thick. Using the top or a glass or a cookie cutter, cut out doughnut rounds. Roll out scraps and cut out doughnuts once again. Once you cut out all of the doughnuts, place them on a parchment lined baking sheet. Cover and let them rise again for another hour.
  • 6. In a saucepan, heat oil. It should be about 350 degrees Fahrenheit. One by one, making sure not to crowd the pan, place doughnuts into the hot oil. Fry each one for about 45 seconds on each side.
  • 7. Remove fried doughnuts from the pan and place on paper towel-lined baking sheet to drain.
  • 8. Using a pastry bag filled with your favorite filling, fill each doughnut with desired filling. I sprinkle a bit of powdered sugar on top. Enjoy!
