The eggplant is stuffed with tomatoes, garlic, parsley and other spices. This is one eggplant recipe that you will make over and over again. It also makes for a beautiful presentation.

  • 3 tbsp olive oil
  • 1 red onion, diced
  • 4 cloves garlic, minced
  • 4 medium tomatoes, diced
