Sponge Cake with Macerated Berries

Ingredients

  • 6 eggs
  • 1 cup plus 3 tbsp white sugar
  • 1/4 cup water
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 cup cake flour
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1 pint mixed berries

Instructions

  • 1. Separate the eggs. In a large mixing bowl, beat egg yolks until very thick. Then beat in 1 cup sugar, gradually. Add water, lemon juice and lemon zest. Mix in flour.
  • 2. In another bowl, beat egg whites until frothy. Add cream of tartar and salt. Beat egg whites until stiff, but not dry.
  • 3. Carefully fold egg whites into rest of batter. Pour batter into an un-greased 9-inch tube pan lined with parchment paper. Bake at 325 degrees Fahrenheit for 1 hour, or until done.
  • 4. While cake cooks, wash berries. Place berries in bowl and sprinkle with remaining sugar. Refrigerate until the cake is ready to serve.
  • 5. Remove cake from oven and remove from pan using parchment paper. Cool uncovered for 15 minutes. Slice and spoon the macerated berries on top! Enjoy!
