This is a recipe for spanakopita. Spanakopita is a Greek spinach pie in phyllo dough. It’s absolutely delicious! It can be served as an appetizer or as a vegetarian main course.

Traditionally, these spinach pies are wrapped into triangle shapes, but this is the easier (lazy) version, and just as delicious! Try it today!

Ingredients

  • 1/4 cup olive oil
  • 2 packages frozen spinach, defrosted, squeezed, drained and chopped
  • 1/4 cup dill, chopped
  • 3 scallions, sliced
  • 1/4 cup parsley, chopped
  • salt and pepper to taste
  • 2 eggs, lightly beaten
  • 1 cup feta cheese, crumbled
  • 12 sheets phyllo dough

Instructions

  • 1. In a skillet over medium heat, heat 2 tbsp olive oil. Add drained spinach, dill, scallions and parsley. Season with salt and pepper. Sauté for 3-4 minutes. Let cool.
  • 2. Mix in eggs and feta cheese until evenly incorporated.
  • 3. Brush bottom of an 8×10-inch baking pan with olive oil and preheat oven to 350 degrees Fahrenheit.
  • 4. Brush the top of a sheet of phyllo dough with olive oil and place it in the pan. Repeat 5 more times until you have 6 layers of phyllo dough.
  • 5. Place the spinach mixture on top of the phyllo dough and spread evenly.
  • 6. Brush the top of a sheet of phyllo dough with olive oil and place it on the spinach. Repeat another 5 times again, until you have 6 layers.
  • 7. Bake until a golden brown crust forms, about 30-35 minutes. Slice into squares and serve. Enjoy!
