Spaghetti with Roasted Tomato Sauce

Spaghetti with roasted tomato sauce is a bit of a different take on how I usually make my pasta.

Instead of cooking the sauce over a stovetop, I roasted the tomatoes in the oven. What came out was a sweeter tasting sauce, since the tomatoes and onions caramelize and bring a really unbelievably smooth, sweet and delicious flavor. I also love how the garlic melts into the tomatoes, something that doesn’t happen on the stovetop.

The addition of butter also makes everything smoother. After all of the ingredients are roasted, I blend them with a hand blender, then serve with my favorite pasta. I love spaghetti, but you can use any shape you like. Don’t forget to top with Parmesan cheese! Simple and delicious. Hope you enjoy spaghetti with roasted tomato sauce!

Ingredients

  • 1, 28-oz can whole tomatoes
  • 1 onion, quartered
  • 6 cloves garlic, crushed
  • 4 tbsp butter
  • 1/2 tsp crushed red pepper flakes
  • kosher salt
  • pepper
  • 1 box spaghetti
  • Parmesan cheese, for serving
  • 1/2 cup fresh basil

Instructions

  • 1. Preheat the oven to 425 degrees Fahrenheit. Combine tomatoes, garlic, basil, onion, butter, and red pepper flakes in a baking dish. Season with salt and black pepper. Bake for 40 minutes.
  • 2. Meanwhile, cook pasta in a large pot of salted boiling water until al dente. Drain.
  • 3. Transfer the baking dish contents into the pasta pot, using a hand blender blend until smooth. Return pasta to the pot. Toss until sauce coats the pasta.
  • 4. Serve with Parmesan cheese.
