Smoked Salmon Tea Sandwiches

This is a recipe for smoked salmon tea sandwiches. I don’t really think that it’s a recipe, as it’s really more of something you put together–there’s no cooking involved. In the end, you have beautiful, mini tea sandwiches topped with herbed cream cheese and smoked salmon, garnished with chives.

I cut the sandwiches into bite sized pieces, which are great especially for company. It’s easy, delicious and they look great on a cutting board. This is a staple for brunches at our house.

Ingredients

  • 3/4 lb cream cheese, at room temperature
  • 1 1/2 tbsp minced chives
  • 1 1/2 tbsp finely chopped fresh dill
  • 1 1/2 tsp freshly squeezed lemon juice
  • 1/2 tsp coarse salt
  • 1/2 tsp freshly ground pepper
  • 1 loaf grain bread, sliced
  • 1 1/2 lbs smoked salmon, thinly sliced

Instructions

  • 1. In a bowl, combine cream cheese, chives, dill, lemon juice, salt, and pepper.
  • 2. Lay out the bread slices; shmear the slices with the prepared cream cheese mixture. Top the slices with the smoked salmon over the cream cheese.
  • 3. Place sandwiches on a baking sheet, cover with plastic, and place in refrigerator until the cream cheese is cold, about 30 minutes, or until ready to serve.
  • 4. Transfer sandwiches to a cutting board. Trim crusts from sandwiches, and cut them into squares. Serve.
