Skirt Steak with Chimichurri Sauce

This is  a recipe for skirt steak with chimichurri sauce. This is one of those recipes that should always be made when you want to impress some people (anyone really, new boyfriend, family, friends or a boss) that are coming for dinner and have no idea what to make. The best part is, it literally takes minutes to put together and tastes beyond amazing!

The chimichurri is an Argentinian pesto-ish sauce made out of parsley, garlic, and olive oil with a squeeze of some lemon juice. The skirt steak just needs to be seared on either a skillet or a grill, for a total of 6-8 minutes, cut and topped with the chimichurri. That’s it!

Amazing results, and very little time invested. That is a very successful dinner party to me. Enjoy!

Ingredients

  • 2 1/2 lbs skirt steak
  • salt
  • pepper
  • 1/4 cup olive oil, plus 1 tbsp
  • 2 cups parsley
  • 1/2 tsp hot pepper flakes
  • 4 garlic cloves
  • half lemon, juiced

Instructions

  • 1. In a processor, combine the garlic and parsley. Chop until the ingredients are finely chopped. Transfer to a bowl and mix in the lemon juice, olive oil, pepper flakes and salt. Stir and set aside.
  • 2. Meanwhile, fire up your grill, or if you have a grill skillet, heat that up. When smoking add the oil. Season your skirt steak generously with salt and pepper. Add the steak to the hot pan or grill. For medium-rare cook for 2 minutes per side. For medium add another minute.
  • 3. Remove and let the meat rest for 3-5 minutes. Slice the steak and top with the chimichurri sauce and serve. Enjoy!
