This is a recipe for pesto sauce. This is the easiest and fastest pasta sauce you can make. It screams summer. It’s a green fresh sauce made from basil leaves, garlic, nuts, parmesan cheese, olive oil, salt and pepper.

The smell of basil is intoxicating! It’s great for those very busy days when you have no idea what to serve for dinner. I make a batch of this pesto and store it in the fridge. When I’m hungry, I just cook some pasta and pour over some pesto.

It’s just one of those great sauces to have on hand, just like tomato sauce. I often use some to top other dishes for that extra pop of flavor. Any way you want to use this pesto will be great! Enjoy!

Ingredients

  • 4 cups fresh basil leaves, packed tightly
  • 1 1/3 cups pine nuts
  • 3-4 cloves garlic
  • 1 1/4 cups Italian parmesan cheese, grated
  • 1 cup good qual­ity extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  • 1. Place basil leaves in a food processor and pulse until halfway chopped.
  • 2. Add pine nuts and gar­lic. Con­tinue puls­ing. Add cheese, salt and pepper.
  • 3. While processor is running, driz­zle olive oil into the basil mix­ture. Stop pulsing when desired texture is reached.
  • 4. Serve over pasta. I sprinkle some more cheese and a drizzle with extra olive oil. Enjoy!
