Sometimes you are in the mood for a big piece of meat. This one is one impressive piece. It’s perfect for company, especially for company that you really enjoy!

I serve my simple, easy and perfect prime rib with oven roasted rosemary potatoes. Meat and potatoes, sometimes there’s nothing better. Simple and delicious. I guess you can always make a salad, but no one will eat it when that gorgeous prime rib comes out. Enjoy!

Ingredients

  • 1, 5 lb prime beef roast
  • salt and pepper to taste
  • 4 cloves garlic, peeled
  • 2 sprigs rosemary
  • 4 sprigs thyme
  • 1 tbsp olive oil

Instructions

  • 1. Preheat oven to 400 degrees Fahrenheit. Season roast generously with salt and pepper.
  • 2. Heat ovenproof pan on stove over high heat. Sear roast on all sides. When all sides are browned, add garlic, rosemary and thyme to the pan.
  • 3. Drizzle roast with oil and place in oven. Bake for 12 minutes.
  • 4. Lower oven temperature to 350 degrees and continue roasting for another 45 minutes for medium doneness.
  • 5. Remove roast from oven and cover with foil to let it rest for another 5-10 minutes. Slice, and enjoy!
