Seared Duck Breast with a Berry Reduction

This is a recipe for seared duck breast with a berry reduction. Duck breast cooks quickly and is very flavorful and delicious. The berry reduction brings this dish to a whole different level. The berry reduction is made with wine and berries simmered to a delicious syrup.

Ingredients

  • 4 duck breasts, skin on, scored
  • salt
  • pepper
  • 1 cup red wine
  • 2 cups berries of your choice
  • 1/4 cup sugar

Instructions

  • 1. Heat a heavy-bottomed pan over high until smoking. Season duck with salt and pepper.
  • 2. Carefully place duck breast skin side down in the pan and sear for 5 minutes. Once the skin has rendered most of its fat, flip and fry on the other side for another 3 minutes.
  • 3. Meanwhile, in a saucepan, combine berries, wine and sugar over medium heat. Bring to a boil then reduce to a simmer. Simmer for 10-15 minutes, until the mixture reduces and is a syrupy consistency.
  • 4. When the duck is seared, place on a plate to rest and covered with foil until ready to plate. Slice the duck thinly and drizzle with berry reduction.
