This is a recipe for sambusak, flaky sesame seed-crusted pastries that are filled with a savory filling.

You can fill these sambusaks with any filling that you like, sometimes I make them with cheese, but I prefer the meat filled ones myself. I sauté the ground meat and season with flavorful spices, then fill the pastry dough and fry until golden brown. I like to put garnish with chopped parsley just before serving. Delicious!

This is a Sephardic dish traditionally served on Jewish holidays, but I like to make it year round and serve it as an appetizer for Shabbat.

Ingredients

  • 2 sheets parve puff pastry, defrosted
  • 1 lb ground beef
  • 2 scallions, sliced
  • 1 shallot, diced
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp cumin
  • 1/4 tsp turmeric
  • 1/4 tsp ginger powder
  • 1 tsp pepper
  • oil for frying
  • parsley for garnish, optional

Instructions

  • 1. Roll out the pastry and cut each sheet into 6 squares.
  • 2. Heat oil in a pan and saute the shallots until translucent. Then add the beef in and saute until lightly browned. Drain and cool.
  • 3. Combine beef, scallions, salt, cinnamon, cumin, turmeric, ginger and pepper, and mix well until evenly incorporated.
  • 4. Place 1 tbsp of filling into the center of each square. Fold over and pinch into a triangle shape.
  • 5. In a saucepan or dutch oven, pour 1 inch of oil and heat to 375 degrees Fahrenheit.
  • 6. Deep-fry until golden. Garnish with parsley before serving. Enjoy!
