Salmon and Goat Cheese Salad

This is a recipe for salmon and goat cheese salad. It is not only good for you but it tastes delicious! Packed with protein from the salmon and goat cheese, it’s light and yet enough to fill you up. It’s a perfect start to any meal or a wonderful lunch.

I take this delicious salad to work with me. Yes, I’m very fancy. It’s perfect with leftover salmon (if you have any). If not, it literally bakes in 10 minutes–a perfect salad for the warmer weather months. Enjoy!

Ingredients

  • 8 oz baked salmon, broken up into pieces
  • 3 oz goat cheese
  • 10 oz arugula or fresh greens
  • 1/4 cup extra virgin olive oil
  • 1 lemon, juiced
  • 1 tsp sea salt
  • 1 tsp pepper

Instructions

  • 1. In a large bowl, add your greens. In a small bowl, whisk together the olive oil and lemon juice and season with salt and pepper and mix. Drizzle half the vinaigrette mixture over the greens and mix with your hands, coating the leaves.
  • 2. Transfer the greens to a platter and top with the salmon and goat cheese. Drizzle remaining vinaigrette over the salad and serve!
