This is a recipe for salmon ceviche. A ceviche is fresh raw fish cured in citrus juices. The best ingredients, make the best dishes. Get the best/highest quality salmon and you will have the most amazing ceviche.

I love this dish especially in the warmer months. It’s refreshing, healthy and delicious. Plus, it literally takes 15 minutes to get everything together. This is a great dish to make when you are having company over since there is no actual cooking. My favorite kind of dishes are ones that are packed with flavor, take the least amount of time to fuss over and let you spend more time enjoying and blabbing with yours friends.

Ingredients

  • 1/4 cup olive oil
  • 3 limes, zested and juiced
  • 2 tsp salt
  • 1 red onion, finely sliced
  • 1 jalapeño pepper, finely sliced
  • 1/4 cup cilantro
  • 1 lb sashimi grade salmon filet

Instructions

  • 1. In a bowl, mix olive oil, lime zest and juice, salt, red onion, jalapeño and cilantro.
  • 2. Cut salmon into 1/2-inch cubes.
  • 3. Add salmon to vinaigrette and mix well. Refrigerate for at least 3 hrs before serving.
