This is a recipe for Russian home fries. This is what every Russian child grows up on. This is my comfort food. SERIOUSLY though, since they only used to harvest potatoes in Soviet Russia, this is what everyone ate. Just kidding, not really….

Growing up, anyone who came over for a play date would always be offered these fried potatoes, and guess what? Everyone loved them. Crunchy on the outside and moist and smooth on the inside. It’s delicious served with EVERYTHING and even alone, just like that–a plateful of fried potatoes. Too Russian?

So please, do yourself and everyone in your family a favor and fry up some amazingly delicious Russian home fries. Enjoy!

Ingredients

  • 6 russet potatoes, peeled and diced
  • 1 medium onion, thinly sliced
  • 5 tbsp grapeseed oil (or whatever you like to fry in)
  • salt and pepper to taste

Instructions

  • 1. In a heavy pan, heat oil over medium heat. Add potatoes. Be careful, the oil will splatter!
  • 2. Fry potatoes until lightly brown, stirring occasionally with a spatula. When browned on all sides, add onion. Season with salt and pepper. Reduce heat to low and cover with lid for 10 minutes.
  • 3. Remove lid, stir again, making sure the potatoes don’t stick to the bottom. Cook for another 5-8 minutes, check for tenderness and serve!
