As a child I used to hate onions, but the older I got the more I grew to love them. Now I love them raw in salads as well as grilled, so of course, I love roasted onions!

When onions are cooked they are no longer have the harsh smell, or taste, and become sweet.

With this recipe, the roasted onions are incredibly soft, sweet and bursting with flavor. Plus, the presentation is so gorgeous!

This vegetable side is so easy to prepare and goes well with everything.

My favorite part is while they are baking, they caramelize, so you can really taste the sweetness of the onions. Another great thing is, it requires very little work. You just chop off the tops and bottoms, no need to peel them, just pop them into the oven on your sheet pan.

I drizzle some olive oil and balsamic vinegar before serving. Enjoy these delicious roasted onions!

Ingredients

  • 8 onions
  • pinch salt
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

  • 1. Preheat oven to 425 degrees Fahrenheit.
  • 2. Cut off the top and bottoms of the onions, leaving the skin intact. Stand onions up flat on a sheet pan.
  • 3. Roast for 1 hour, until the inner onion is very tender.
  • 4. Drizzle a few drops of balsamic vinegar and olive oil, and serve with salt. Enjoy!
