This is a recipe for roasted Jerusalem artichokes. I am officially obsessed with them. I want to roast some up for everyone that comes over and share these delicious, ugly root veggies with them.

The taste is kind of sweet but not like a sweet potato, and the texture is like a potato, but the taste is like an artichoke, except better, and with much less hassle.

These delicious sunchokes are a perfect addition/side to any meal, seriously! Make some today!

Ingredients

  • 2 1/2 lbs Jerusalem artichokes
  • olive oil
  • salt
  • pepper

Instructions

  • 1. Pre-heat your oven to 350 degrees Fahrenheit.
  • 2. On a baking sheet or pan, lay the Jerusalem artichokes in a single layer, making sure not to over crowd. Season with salt, pepper and drizzle with olive oil. Bake for 15-20 minutes, turning the chokes half way through. Serve!
