This is a recipe for roasted endive. If you’ve never had this delicious vegetable in your life, this is probably a great place to start. Roasting the endives brings out the sweetness, caramelizing the vegetable while also making it tender.

Just a little fact about this delicious veggie–the endive was one of Julia Child’s favorites, especially roasted and braised. If it’s good enough for Julia it’s definitely good enough for me.

Ingredients

  • 4-6 endives, halved
  • olive oil
  • salt
  • pepper

Instructions

  • 1. Pre-heat your oven to 350 degrees Fahrenheit.
  • 2. On a baking sheet or pan, lay the endives in a single layer, making sure not to over crowd. Season with salt, pepper and drizzle with olive oil. Bake for 15-20 minutes, turning the endives half way through. Serve!
