This recipe for roasted chicken with rosemary¬†is easy, simple and delicious. It’s flavorful and moist, which is most important when it comes to chicken.

Roasting a chicken is simple. I stuff the cavity with lemon and rosemary sprigs. It makes the house smell amazing.

Ingredients

  • 1 onion, peeled and quartered
  • kosher salt to taste
  • fresh ground pepper to taste
  • drizzle olive oil
  • 4-5 lb roaster chicken
  • 1 lemon, quartered
  • 2 sprigs fresh rosemary

Instructions

  • 1. Preheat oven to 400 degrees Fahrenheit. Line a roasting pan with parchment paper and place a roasting rack on top of the paper, if you have one.
  • 2. Stuff chicken cavity with lemon quarters, rosemary and onion quarters. Season with salt and pepper on all sides. Place the chicken, breast side down, on roasting rack and rub with olive oil.
  • 3. Roast for 40 minutes. Remove and flip the bird so that the breast side is up. Return to oven and continue roasting for another 25 minutes.
  • 4. Remove from oven and tent with foil. Rest the chicken for 5-8 minutes. Carve and serve.
