Ingredients

  • 20 cherry tomatoes, on the vine
  • 1/4 cup good olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • balsamic vinegar (optional)

Instructions

  • 1. Preheat oven to 450 degrees Fahrenheit.
  • 2. Place tomatoes, still on vine, in a single layer on a sheet pan or baking pan. Drizzle with olive oil and season with salt and pepper.
  • 3. Roast for 35-40 minutes. Splash tomatoes with a few drops of balsamic vinegar before serving. Serve with crusty bread.
