This is a recipe for roasted carrots. It is by far the easiest side dish that can ever be made. I like to use young carrots straight from the farmers market, but any will do.

Just spread them out on a baking sheet, season with salt, pepper and a little drizzle of olive. Roast and serve.

Carrots are healthy and filled with tons of vitamins, plus they are delicious! I love that they caramelize in the oven, giving them a wonderful sweetness. Enjoy!

Ingredients

  • 12 young carrots
  • 3 tbsp olive oil
  • salt
  • pepper
  • dill for garnish, optional

Instructions

  • 1. Preheat oven to 400 degrees. Peel the carrots.
  • 2. Toss carrots with olive oil, salt, and pepper and spread on a sheet pan in a single layer.
  • 3. Roast in the oven for 20 minutes, until browned and tender. Garnish with dill and serve!
