Roasted Broccoli and Cauliflower

This is a recipe for roasted broccoli and cauliflower. Recently, I have become obsessed with roasting vegetables and this is my favorite combination. Plus, it is a low calorie side and gluten-free.

The broccoli and cauliflower gets sweeter when roasted in the oven thanks to the caramelization that happens. It’s so much better than you would ever imagine. Plus, it’s really good for you.

Ingredients

  • 2 lb broccoli florets
  • 1 cauliflower head, cut into florets
  • 4 tbsp extra virgin olive oil
  • salt
  • pepper

Instructions

  • 1. Preheat oven to 400 degrees Fahrenheit.
  • 2. On a parchment lined baking sheet, spread the broccoli and cauliflower in a single layer. If it’s crowded use a second baking sheet. Make sure not to overcrowd or the edges will get soggy and not turn crispy. Drizzle with olive oil. Season generously with salt and pepper and roast for 25 minutes.
  • 3. When ready, transfer to a serving dish. Enjoy!
