This is a recipe for roasted beets with a balsamic glaze. I love beets because they have a ton of vitamins and the most beautiful color that is found in nature. I love to roast them, bring out the sweetness even more.

In this recipe, beets are roasted, then glazed with a balsamic reduction. These beets are great to serve as a starter with some goat cheese, or just by themselves as a salad or side dish.

Ingredients

  • 3 beets, scrubbed
  • olive oil
  • salt
  • 1/2 cup balsamic vinegar
  • 2 tsp sugar
  • zest from 1/2 orange
  • freshly ground black pepper

Instructions

  • 1. Preheat oven to 375 degrees Fahrenheit. Drizzle olive oil over the beets and wrap them in aluminum foil.
  • 2. Roast for 1 hour. Remove from the oven, and cool about 10 minutes.
  • 3. Meanwhile, prepare balsamic glaze. In a sauté pan, mix balsamic vinegar and sugar. Heat over high heat until the vinegar has reduced to a syrup consistency. Add orange zest.
  • 4. Peel beets and cut in half or into quarters. Add beets to the balsamic syrup, season with salt and pepper, toss to coat and serve.
