This is a recipe for perfect roast beef. The recipe is very simple, yet so delicious that your family and guests will think you were slaving all day over the roast.

This is one of my favorites, since I love those kinds of meals, little effort and very impressed reactions from the guests. Everyone is a critic in my household, and the reviews are rave with this dish. I roast the beef with vegetables so it has a built in side dish, just in case. This recipe is for a medium cooked roast, decrease or increase the cooking depending on your doneness preferences. Enjoy!

Ingredients

  • 3-4 lbs beef round roast
  • 5 medium shallots, halved
  • 2 carrots, chopped
  • 1 large fennel bulb, sliced
  • 1 bulb garlic, cut in half
  • 1 small bunch fresh thyme, rosemary
  • olive oil
  • sea salt
  • freshly ground black pepper

Instructions

  • 1. Pre-heat the oven to 400 degrees Fahrenheit. Pat your roast dry, let the meat come to room temperature before placing in the oven. Rub some olive oil all over the roast. Season generously with salt and pepper all over the roast.
  • 2. In an oven proof baking dish, lay all the vegetables on the bottom, seasoning with more salt and pepper, olive oil and mix in the herbs (thyme and rosemary). Place the roast beef on top of the vegetables.
  • 3. Roast for 1 hour. When ready place some foil over the roast and let it rest for 5-8 minutes before carving. Enjoy!
