This recipe forĀ rack of lamb with garlic, rosemary and thyme is simple and delicious. I love lamb for so many reasons. One, it’s a meat that does not contain any hormones or antibioticsĀ and is probably one of the cleanest meats you can get nowadays.

When the meat is a great quality there is no need to do much to it to make it flavorful, since fresh is the best flavor. This recipe just uses a few spice to enhance the beautiful lamb.

The lamb is roasted in garlic, thyme and rosemary, which compliments the flavor and tenderness of the lamb chop. Simple, easy and delicious. Enjoy!

Ingredients

  • 1 3-lb rack of lamb, frenched
  • kosher salt and freshly ground black pepper, to taste
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh rosemary, roughly chopped
  • 1 tbsp chopped thyme, plus 4 sprigs
  • 10 cloves garlic, smashed

Instructions

  • 1. Preheat the oven to 450 degrees Fahrenheit. Season lamb generously with salt and pepper.
  • 2. Heat oil in a cast-iron skillet over medium-high heat. Add lamb fat side down and cook, using tongs to flip and sear the bottom and sides of the rack, until browned.
  • 3. Turn lamb fat side up in the skillet and scatter herbs over the top.
  • 4. Add garlic to skillet and transfer to oven. Roast for 30 minutes for medium or less for medium rare. Let cool for 5 minutes before slicing into chops and serving.
