This is a recipe for quinoa, cucumber and heirloom tomato salad. It’s topped with feta cheese and tossed with a simple lemon vinaigrette and some chickpeas and seasoned with salt and pepper.

This salad is satisfying enough to have for lunch or you can serve it with a delicious fish fillet on the side. Either way, it’s packed with nutrition, protein and deliciously fresh flavor. Enjoy!

Ingredients

  • 1 cup quinoa, cooked
  • 4 oz feta, crumbled
  • 1 1/2 cups heirloom cherry tomatoes
  • 2 cucumbers, chopped (Persian)
  • 2 scallions, finely chopped
  • 1/2 cup parsley, finely chopped
  • 1 cup chickpeas
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp extra virgin olive oil
  • 1 lemon, juiced

Instructions

  • 1. Combine all of your vegetables (tomatoes, cucumbers, scallions, and chickpeas) in a large bowl with the quinoa. Add in the parsley and mix.
  • 2. Meanwhile, in a small bowl, combine the olive oil, lemon juice, salt and pepper together and whisk creating your vinaigrette.
  • 3. Drizzle in your vinaigrette over the salad mixture. Top with feta cheese right before serving. Enjoy!
