Quick Pickled Cauliflower

I got this recipe for from my friend’s mother-in-law. Every time I’ve been to her house it’s always on the table. It’s always fresh and delicious. I had to have the recipe.

I made one little addition to the recipe with red pepper flakes, because I love everything spicy. If you like a milder flavor, just omit the flakes. This is a perfect thing to serve with any meal or as a snack with cocktails or vodka (if you’re Russian like me).

The cauliflower is crisp and refreshing with that mild pickle taste. This is my favorite vegetable to pickle. Plus, it’s ready the next day. Try this recipe for quick pickled cauliflower. Enjoy!

Ingredients

  • 10 cups water
  • 2 tbs kosher salt
  • 2 tbs sugar
  • 1 cup vinegar
  • 1 tbsp peppercorns
  • 2 tsp red pepper flakes
  • 5 bay leaves
  • 3 large carrots, peeled and sliced
  • 1 cauliflower head, florets only
  • 1 onion, sliced
  • 3 bell peppers, assorted colors, sliced

Instructions

  • 1. In a large stock pot, bring water, salt, and sugar to a boil. Add vinegar, peppercorns and bay leaves to pot and remove from heat.
  • 2. Layer carrots, cauliflower, onion, and pepper carefully into pot. Repeat until the all vegetables are used. If the liquid does not cover the vegetables completely, add more water.
  • 3. Cover with lid and let marinate for 24 hours at room temperature. After 24 hours, refrigerate. Serve!
