I am not a pastry chef, not even close, but breads are delicious and simple enough to make. This makes me happy because I don’t have to stress about how some cake or pastry will come out. It’s pretty simple to combine all of the ingredients, transfer the batter into a loaf pan and bake. I’m pretty good at slicing and serving too.

Ingredients

  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger powder
  • 1 tsp salt
  • 4 eggs
  • 2 cups sugar
  • 2 cups pumpkin puree
  • 1 orange, zested
  • 1 tsp pure vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup pumpkin seeds
  • 11/4 cups canola oil

Instructions

  • 1. Preheat oven to 350 degrees Fahrenheit. Spray 2 loaf pans with cooking spray.
  • 2. In a bowl, mix flour, baking soda, cinnamon, ginger and salt.
  • 3. Add eggs, cream cheese, sugar, pumpkin, oil, vanilla and orange zest and mix well. Divide the batter between prepared pans.
  • 4. Sprinkle seeds over the loaves and bake for 1 hour, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool slightly before serving.
