This is a recipe for pomegranate couscous. It’s a perfect side to any meal. It literally takes minutes to put together and tastes delicious, refreshing and will surely wake up your taste buds.

Serve with your favorite protein. Anything from chicken to fish.

Ingredients

  • 1 cup couscous
  • 1 1/2 cups hot water
  • 1 cup pomegranate seeds
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 lemon, juiced
  • 2 tbsp extra-virgin olive oil
  • kosher salt and freshly ground black pepper to taste

Instructions

  • 1. Coarsely chop parsley and mint.
  • 2. Put the couscous in a medium bowl. Add in the chopped herbs. Pour water over it and stir with a fork to combine. Cover and let sit for 10-15 minutes, then uncover and fluff with a fork.
  • 3. Add lemon juice, drizzle with olive oil, and season with salt and pepper. Toss the pomegranate in and serve!
