Ingredients

  • 6 pears, peeled
  • 1 lemon, peeled and juiced
  • 1 bottle dry white wine
  • 1 1/2 cups sugar
  • 1 vanilla bean, sliced lengthwise
  • 2 cinnamon sticks

Instructions

  • 1. Place peeled pears into a bowl with lemon juice and one cup of water to prevent discoloring.
  • 2. Combine wine, sugar, vanilla bean, cinnamon, and lemon peel in a large saucepan. Bring to boil over medium heat.
  • 3. Add pears and lemon water. Reduce heat and simmer for 20 minutes. Remove pears, and discard lemon peel, vanilla bean and cinnamon sticks.
  • 4. Raise heat and bring poaching syrup to slow boil, and reduce liquid to 3 cups.
  • 5. Cool the syrup. Add pears and coat with syrup. Serve warm or cold.
