Pesto Pasta Salad

This is a recipe for pesto pasta salad. It’s a great side dish for any lunch or dinner and it’s easy to prepare and can be made ahead. It’s also great to take with you to work for lunch.

You can add any vegetables that you like and it always works well with this pesto. Enjoy!

Ingredients

  • 4 cups spiral or penne pasta
  • 1 cup fresh basil pesto,  click here for the recipe

  • 2 tbsp green olives, chopped
  • 1/2 cup sun dried tomatoes, chopped
  • 1/2 fresh cherry tomatoes, chopped
  • fresh basil leaves, coarsely chopped
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  • 1. Cook the pasta in salted water according to the package instructions.
  • 2. Drain and pour the pasta in a big bowl. Mix in fresh basil pesto and green olives.  Click here for the recipe

  • 3. Gently mix in cherry tomatoes, sun dried tomatoes, fresh basil leaves and olive oil. Season with salt and pepper to taste. Serve at room temperature. Enjoy!
