This is a recipe for pear and blue cheese salad. This salad is everything a really great salad should be–a little bit of sweet and tangy.┬áThe best ingredients that you can find thrown together, make something really special.

  • 10 oz bag mixed fresh greens or arugula
  • 1/2 red onion, thinly sliced
  • 1 Bosc pear, cored and thinly sliced
  • 1/2 cup candied walnuts, pecans or almonds
  • 1/2 cup (good quality) blue cheese (Roquefort or Danish blue)
  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  • 1. Place the greens in a large bowl. Add the red onion, pear, nuts, and blue cheese to the bowl and toss to mix evenly.
  • 2. In a separate small bowl, whisk the balsamic vinegar, olive oil and salt and pepper together. Drizzle over the salad and serve!
