Oladi (Russian Pancakes)

This is a recipe for oladi–mini Russian pancakes. They are made with buttermilk giving them a delicious hint of tangy flavor. They are so much better than regular pancakes and are usually eaten with jam and sour cream on the side.

This is my childhood comfort food. My grandma finally taught me how to make these delicious mini pancakes, which I now make for my daughter. Hope you enjoy them as much as we do in my family.

Ingredients

  • 1 cup flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups buttermilk or kefir
  • oil for frying

Instructions

  • 1. Whisk together flour, sugar, and salt. Beat in eggs and whisk in buttermilk or kefir. Mix well until evenly incorporated and all the lumps are dissolved.
  • 2. Heat a skillet over medium heat and drizzle enough oil to cover the skillet.
  • 3. Using a tablespoon, ladle the batter into the hot skillet. Turn the heat down if dough browns too quickly. When browned, flip, and repeat on other side.
  • 4. Repeat until all the batter is used. Serve plain, with sour cream or jam. Enjoy!
