Matzah Latkes

These matzah latkes are moist on the inside and  crispy on the outside. We eat it like bread in my family. You can top the latkes with anything from baba ghanoush to hummus or lox. You can even use matzah latkes as biscuits.

Matzah latkes are simple to make and your family and guests will love them!

Since we love variety in my family we always have both potato and matzah latkes. We love them spicy, but you can add as little or as much spice as you want.

Ingredients

  • 2 cups matzah meal
  • 2 1/2 cups boiling water
  • 2 large eggs
  • 2 tsp salt
  • 1 tsp pepper
  • oil for frying

Instructions

  • 1. In a mixing bowl, mix matzah meal and boiling water.
  • 2. Add eggs and mix well until incorporated evenly. Add salt and pepper.
  • 3. Heat pan with an inch of oil and over medium heat. Meanwhile, fill a small bowl with cold water. This will help you form the latkes so they don’t stick to your hands.
  • 4. Dip your hands into the cold water before forming matzah latkes. Form the patty into oblong shaped patties around 3 inches long.
  • 5. Carefully place formed latkes into oil. Fry on both sides until golden brown and crispy, around 3 minutes per side. Repeat until all patties are made. Serve immediately, they taste best then!
