This is a recipe for marble cake. Marble cake is a vanilla cake with swirls of chocolate. It became popular way back in the 19th century, when chefs used molasses to swirl a darker color into the cake batter.

In this recipe I use cocoa powder. This simple cake is a great end to any meal. The great thing about this recipe is that it is parve. I serve with tea and coffee. Enjoy!

Ingredients

  • 3 cups flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 5/6 cups sugar
  • 1 cup margarine
  • 4 eggs
  • 1 tbsp vanilla extract
  • 3/4 cup brewed coffee
  • 1/4 cup cognac
  • 1/3 cup cocoa powder
  • 2 tbsp vegetable oil
  • powdered sugar for garnish

Instructions

  • 1. Preheat the oven to 350 degrees Fahrenheit. Meanwhile, mix together flour, baking powder, and salt.
  • 2. Using a food processor, whip 1 1/2 cups sugar and margarine until fluffy. Add eggs one at a time, and mix until evenly incorporated.
  • 3. Add vanilla, cognac and coffee. Slowly, add flour mixture in batches, until your batter in smooth and mixed well.
  • 4. Pour batter into a greased cake pan, reserving about 1 cup of batter in the processor.
  • 5. To the remaining batter, add cocoa, 1/3 cup sugar, and oil and pulse until just combined.
  • 6. Pour the cocoa mixture gently and evenly on top of the batter, then swirl it with a knife to get a marbled effect. Bake 1 hour or until a knife inserted in the center comes out clean.
  • 7. Remove cake from the pan and let it cool for at least 15 minutes before serving. Garnish with powdered sugar and serve with tea and coffee.
