Lentil and Orzo Salad

This is a recipe for lentil and orzo salad. Lentils are really underused in my house. I actually found a new bag in the pantry, when I was trying to figure out what to make as a side dish.

I cooked the lentils in a stock, then tossed with lettuce, cabbage and crumbled some goat cheese on top.

This recipe is a really great, earthy and hearty side to any protein—especially fish. The addition of cumin to the vinaigrette is especially great and surprising! Enjoy!

Ingredients

  • 2 1/2 cups vegetable stock
  • 1 cup green lentils
  • 3 bay leaves
  • 1/2 cup orzo pasta
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/4 tsp cumin
  • 1/2 tsp pepper
  • 1 head romaine lettuce, chopped
  • 1 cup red cabbage, chopped (optional)
  • 5 oz goat cheese, crumbled
  • salt to taste

Instructions

  • 1. In a saucepan, bring vegetable stock to a boil. Add lentils and bay leaves.
  • 2. Reduce heat to simmer, and cook until lentils are tender, but not falling apart, about 30 minutes. Discard bay leaves. Drain and cool lentils.
  • 3. Meanwhile, cook orzo pasta in salted boiling water. Drain and cool.
  • 4. In a small bowl, mix olive oil, red wine vinegar, cumin and pepper.
  • 5. In a large bowl, combine cooked lentils and orzo with lettuce and optional cabbage. Toss with vinaigrette and top with crumbled goat cheese. Serve!
